One day I found I was able to move the chat panel so that I would appear next to my text rather than on top of it and now that feature is gone. I would love to be able to look at the chat panel and back at my text without clicking back and forth

Seems like you are referring to the "pin" feature? That's still in there, but it might be that your window/screen is a bit too small for the button to appear?
